Cauliflower Fried Rice

A guilt-free, delicious version of fried rice made with riced cauliflower and colorful veggies.

Ingredients

  • 1 head of cauliflower
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Rinse the cauliflower under cold water and remove the leaves and stem. Grate it or pulse it in a food processor until it resembles rice.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds.
  4. Next, toss in the mixed vegetables and cook for another 3-4 minutes.
  5. Push the veggies to one side of the skillet, then crack the eggs into the empty space and scramble until cooked.
  6. Add the riced cauliflower to the skillet and pour in the soy sauce; mix everything well.
  7. Stir-fry everything together for another 5 minutes.
  8. Season with salt, pepper, and sprinkle the chopped green onions before serving.

Notes

Customize the mixed vegetables based on what you have at hand. For a spicier kick, add chili flakes or sriracha.
