Crispy and delicious zucchini fritters that celebrate summer’s bounty, perfect as a snack, appetizer, or side dish.

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.
  2. Squeeze the zucchini with a clean cloth or paper towel to remove excess moisture.
  3. Combine zucchini, flour, Parmesan cheese, egg, garlic powder, and black pepper in a bowl. Mix until well combined.
  4. Heat olive oil in a frying pan over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the pan, flattening them slightly.
  6. Cook for about 3-4 minutes on each side or until golden brown.
  7. Remove from the pan and drain on paper towels.
  8. Serve warm with a dollop of sour cream or a fresh herb dip.

Notes

Make sure to squeeze out as much moisture from the zucchini as possible for crispy fritters. You can customize with herbs or other vegetables.
