1 box Jiffy Corn Muffin Mix
1 can creamed corn
1 can black beans, rinsed and drained
1 cup cooked ground beef or turkey
1 cup shredded cheese
1 small onion, diced
1 bell pepper, diced
1 teaspoon chili powder
Salt and pepper to taste
1/2 cup milk
1 egg
Instructions
Preheat the oven to 400°F (200°C). Grease a 9×13 inch baking dish.
Combine the Jiffy Mix, creamed corn, black beans, cooked meat, cheese, onion, bell pepper, chili powder, salt, pepper, milk, and egg in a large bowl until well combined.
Pour the mixture into the prepared baking dish, spreading evenly.
Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
Cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen after baking.
