  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • Tortilla chips (for serving)
  • Sour cream (optional)

Instructions

  1. Sautéing the Turkey: In a skillet over medium heat, cook the ground turkey until fully cooked, about 7-10 minutes. Add taco seasoning and a little water as instructed on the seasoning packet. Stir well and let simmer for a few minutes.
  2. Preparing the Salad Base: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and diced avocado.
  3. Mixing the Ingredients: Once the turkey is cooked and seasoned, add it to the bowl of vegetables.
  4. Tossing to Combine: Toss everything together gently but thoroughly until well mixed.
  5. Final Assembly: Serve topped with shredded cheese, salsa, and a side of tortilla chips. Add sour cream if desired for an extra creamy touch.
