A flavorful bowl of teriyaki chicken with crisp vegetables and a sweet-savory sauce, perfect for weeknight dinners or casual gatherings.

  • 1 lb chicken breast, diced
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup cooked rice
  • 1/2 cup teriyaki sauce
  • 1 tablespoon vegetable oil
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Heat vegetable oil in a pan over medium heat until shimmering.
  2. Add the diced chicken breast to the pan and cook, stirring occasionally, until browned and cooked through, about 5-6 minutes.
  3. Stir-fry the broccoli, bell peppers, and carrots for about 5-7 minutes until the vegetables are tender but still crisp.
  4. Pour in the teriyaki sauce and stir to coat the chicken and vegetables evenly. Let it simmer for a couple of minutes to meld the flavors.
  5. Prepare the cooked rice on plates or in bowls.
  6. Serve the stir-fry mixture over the rice, finishing with a sprinkle of sesame seeds and chopped green onions.

Notes

For a spicy kick, add red pepper flakes to the sauce. This bowl pairs nicely with miso soup or cucumber salad.
