A comforting and nutritious Sweet Potato Hash, perfect for breakfast or brunch, blended with vibrant vegetables and optional eggs.

Ingredients

  • 2 large sweet potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 2 cloves garlic, minced
  • 24 eggs (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the sweet potatoes to the skillet and cook for about 10-15 minutes, stirring occasionally, until they start to soften.
  3. Stir in the onion, bell pepper, garlic, salt, pepper, and paprika. Continue cooking until the vegetables are tender and golden brown, about 10 more minutes.
  4. If you’re using eggs, make small wells in the hash and crack the eggs into them. Cover the skillet and cook until the eggs are set to your preference.
  5. Serve hot, garnished with fresh herbs if desired for an extra burst of flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet with a splash of water to keep it moist.
