Colorful bell peppers filled with a savory mixture of ground meat, rice, and tomatoes, baked to perfection.

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to prepare for the deliciousness to come.
  2. Cut the tops off the bell peppers and remove the seeds, creating a perfect little vessel for your filling.
  3. Sauté the chopped onion and minced garlic in a skillet until soft and fragrant, around 3-4 minutes.
  4. Add the ground meat to the skillet and cook until browned, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff the bell peppers with the meat mixture, pressing gently to ensure they are well filled.
  7. Place the stuffed peppers upright in a baking dish.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until melted and bubbly.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze the stuffed peppers for up to 3 months.
