Spaghetti Squash Lasagna

A delightful and comforting spaghetti squash lasagna that offers a healthier twist on traditional lasagna, bursting with flavor and nutrients.

Ingredients

  • 1 large spaghetti squash
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the cut sides with olive oil and season with salt and pepper. Place cut side down on a baking sheet and roast for about 30-40 minutes, until tender.
  4. Mix together the ricotta cheese, egg, Italian seasoning, and a pinch of salt and pepper.
  5. Scrape the flesh of the spaghetti squash with a fork to create strands.
  6. Spread half of the marinara sauce on the bottom of a baking dish.
  7. Layer half of the spaghetti squash, followed by half of the ricotta mixture and half of the mozzarella cheese.
  8. Top with the remaining marinara sauce and sprinkle with Parmesan cheese.
  9. Bake for an additional 25-30 minutes until golden brown and bubbling.
  10. Cool for a few minutes and garnish with fresh basil before serving.

Notes

Great for meal prep and can be assembled a day ahead.
