A delightful twist on a classic comfort food, this Spaghetti Squash Casserole is packed with nutritious ingredients that create a perfectly balanced meal.

Ingredients

  • 1 medium spaghetti squash
  • 1 cup cooked ground turkey or beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and bake for about 30-40 minutes until tender.
  3. Heat olive oil over medium heat in a skillet. Add chopped onion and minced garlic, and sauté until soft and translucent, about 5 minutes.
  4. Mix the cooked spaghetti squash strands, ground turkey or beef, marinara sauce, Italian seasoning, and half of the mozzarella cheese in a large bowl until well combined.
  5. Transfer the mixture to a baking dish, spreading it out evenly, and top with the remaining mozzarella and Parmesan cheese.
  6. Bake for 20 minutes or until cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving to allow the flavors to settle.

Notes

Pairs well with a simple green salad or garlic bread. Leftovers can be stored in the refrigerator for up to 3 days.
