A quick and flavorful shrimp stir fry with mixed vegetables, perfect for busy weeknight dinners.

  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Cook the shrimp until they turn pink, about 2-3 minutes.
  4. Add the mixed vegetables and stir-fry for another 3-5 minutes until they are tender-crisp.
  5. Pour in the soy sauce, season with salt and pepper, and toss everything together.
