A delicious and comforting roasted spaghetti squash dish that serves as a fantastic pasta substitute, perfect for any meal.

Ingredients

  • 1 spaghetti squash
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • Optional toppings (e.g., parmesan cheese, fresh herbs)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside of each half with olive oil and season with salt and pepper.
  4. Place the halves cut-side down on a baking sheet.
  5. Roast in the preheated oven for about 40 minutes, or until tender.
  6. Remove from the oven and let cool slightly.
  7. Use a fork to scrape the insides to create spaghetti-like strands.
  8. Optionally, top with parmesan cheese or fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. Reheat gently in the microwave or on the stovetop.
