A delightful and nutritious roasted cauliflower salad that’s perfect as a side or light main dish. Captures the essence of autumn with its warm flavors.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • 4 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, pepper, and paprika (if using). Make sure each piece is well coated!
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until they are golden brown and tender.
  4. Combine mixed greens, red onion, cherry tomatoes, and roasted cauliflower in a large bowl.
  5. Drizzle with balsamic vinegar and toss gently to mix all ingredients.
  6. Top with crumbled feta cheese before serving.

Notes

This salad can be served warm or cold and pairs well with grilled chicken, fish, or on toasted bread.
