A warm and comforting roasted butternut squash that’s perfect for fall gatherings.

Ingredients

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon ground cinnamon (optional)
  • 2 tablespoons maple syrup (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and remove the seeds.
  3. Peel and cube the squash into bite-sized pieces.
  4. Toss the squash with olive oil, salt, pepper, and cinnamon if using.
  5. Spread the squash in a single layer on a baking sheet.
  6. Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  7. Drizzle with maple syrup before serving, if desired.

Notes

For easy peeling, microwave the squash for a few minutes to soften the skin. Experiment with different spices to customize flavors.
