A vibrant and refreshing quinoa salad packed with colorful vegetables, perfect for meal prep or as a side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 can black beans, rinsed and drained
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. Combine the rinsed quinoa and water in a pot and bring to a boil.
  2. Lower the heat and let it simmer for about 15 minutes, or until all the water is absorbed. Fluff the quinoa with a fork and set aside to cool.
  3. Combine the halved cherry tomatoes, diced cucumber, diced bell pepper, rinsed black beans, diced red onion, and chopped parsley in a large mixing bowl.
  4. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Add the cooled quinoa to the mixing bowl of vegetables. Pour the dressing over the salad and toss everything together until well combined.
  6. Serve fresh or allow the flavors to meld before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid adding dressing until ready to serve for the best texture.
