Ingredients

Scale
  • 1 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/4 cup ground flaxseed (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare your mixing bowl: In a mixing bowl, combine the peanut butter and honey (or maple syrup) until smooth.
  2. Add the goodness: Add the rolled oats, chocolate chips, flaxseed (if using), and vanilla extract. Mix until fully combined.
  3. Roll into bites: Scoop out tablespoon-sized portions of the mixture and roll them into balls.
  4. Set the stage: Place the energy balls on a baking sheet lined with parchment paper.
  5. Chill out: Refrigerate for at least 30 minutes to firm up.
  6. Keep fresh: Store in an airtight container in the refrigerator.

Notes

For added texture, consider including a mix of nuts or seeds. Make them vegan by using maple syrup instead of honey.
