A classic Australian dessert featuring a crispy meringue shell topped with whipped cream and fresh berries.

Ingredients

  • 4 large egg whites
  • 1 cup superfine sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon cornstarch
  • 1 cup heavy whipping cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Whisking the egg whites until stiff peaks form, then gradually adding superfine sugar until glossy.
  3. Fold in the vanilla extract, white vinegar, and cornstarch.
  4. Spoon the meringue onto your baking sheet and shape it into a circular pavlova with a dip in the center.
  5. Bake for 1 hour, then leave it to cool inside the oven.
  6. Whip the heavy cream until soft peaks form.
  7. Top the cooled pavlova with whipped cream and scatter mixed berries on top.
  8. Dust with powdered sugar before serving.

Notes

Store the meringue in an airtight container at room temperature for up to 2 days. Keep whipped cream and berries refrigerated and consume within 1 day.
