A comforting and flavorful one pot meal filled with turkey, beans, and zesty taco flavors, perfect for busy weeknights.

  • 1 pound ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 3 cups chicken broth
  • 12 ounces pasta (e.g., macaroni or penne)
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Brown the ground turkey over medium heat in a large pot until fully cooked and no longer pink, about 5-7 minutes.
  2. Add the diced onion, garlic, and bell pepper. Cook until softened, around 3-4 minutes.
  3. Stir in the black beans, corn, taco seasoning, diced tomatoes, and chicken broth. Bring to a boil.
  4. Add the pasta and reduce heat to a simmer. Cover and cook until the pasta is tender, about 10-12 minutes, stirring occasionally.
  5. Mix in the shredded cheese until melted and combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro.
