A creamy and zesty lemon pasta dish cooked in one pot, perfect for a comforting meal on a rainy day.

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese (for serving)

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the minced garlic and sauté until fragrant.
  3. Combine the pasta, lemon zest, lemon juice, and vegetable broth, stirring to mix.
  4. Bring to a boil, then reduce heat and simmer until the pasta is al dente, about 10-12 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve with grated Parmesan cheese.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove with a splash of vegetable broth to loosen the sauce.
