A vibrant and flavorful Nicoise Salad featuring fresh vegetables, tuna, and hard-boiled eggs, ideal for any occasion.

Ingredients

  • 2 cups mixed salad greens
  • 1 cup green beans, trimmed
  • 2 medium potatoes, boiled and cut into cubes
  • 2 hard-boiled eggs, quartered
  • 1 cup cherry tomatoes, halved
  • 1 can (5 oz) tuna, drained and flaked
  • 1/4 cup black olives
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Blanch the green beans in a pot of boiling water for 3-4 minutes until bright green and tender-crisp. Plunge into ice water to stop cooking.
  2. Combine the mixed salad greens, boiled potatoes, blanched green beans, cherry tomatoes, tuna, black olives, and sliced red onion in a large bowl. Gently toss to combine.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl until well combined.
  4. Dress the salad mixture with the dressing, gently tossing to ensure the ingredients are well coated.
  5. Garnish with quartered hard-boiled eggs on top and serve immediately.

Notes

Serve with a crusty baguette or chilled rosé for an elevated experience. Store leftovers in an airtight container for up to 2 days.
