A vibrant and indulgent grilled corn dish slathered in a creamy sauce, topped with cheese and fresh cilantro, perfect for summer gatherings.

Ingredients

  • 4 ears of corn
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled Cotija cheese
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Grill the corn on medium-high heat until charred, about 10 minutes.
  2. Mix together the mayonnaise, sour cream, lime juice, chili powder, and salt in a bowl.
  3. Remove the corn from the heat and brush the mayonnaise mixture over each ear.
  4. Sprinkle the Cotija cheese evenly over the corn.
  5. Garnish with chopped cilantro and serve immediately.

Notes

For perfect grill marks, rotate the corn every few minutes. Choose fresh, sweet corn for the best flavor. If Cotija cheese is unavailable, feta cheese works as a substitute.
