A vibrant celebration of flavors with grilled corn topped with creamy sauce, cotija cheese, and spices.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Place the husked corn directly on the grill, turning occasionally, until it is beautifully cooked and slightly charred, about 10-12 minutes.
  2. In a mixing bowl, combine the mayonnaise, sour cream, chili powder, garlic powder, lime juice, salt, and pepper. Stir until smooth and well combined.
  3. Remove the corn from the grill and brush each ear generously with the creamy mixture.
  4. While the sauce is still wet, generously sprinkle crumbled cotija cheese over the coated corn.
  5. Garnish your Mexican Street Corn with freshly chopped cilantro and serve immediately.
