A vibrant Mediterranean Orzo Salad bursting with colors and flavors, perfect for lazy afternoons and lively brunches.

Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to the package instructions, about 8-10 minutes. Drain and rinse under cold water.
  2. Combine the cooled orzo with cherry tomatoes, cucumber, red onion, olives, and feta cheese in a large bowl.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  4. Dress the salad with the whisked dressing and toss until evenly coated.
  5. Chill in the refrigerator for 30 minutes or serve at room temperature.

Notes

This salad can be stored for up to 3 days. Allow it to chill before serving to enhance flavors.
