A vibrant salad bursting with the flavors of lemon and fresh vegetables, perfect for summer gatherings.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Boil the Orzo: In a pot, bring vegetable broth or water to a boil. Add orzo and cook according to package instructions until al dente. Once cooked, drain and rinse under cold water to cool.
  2. Combine the Fresh Veggies: In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, and parsley.
  3. Whisk Together the Dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until nicely emulsified.
  4. Dress the Salad: Pour the dressing over the orzo salad and toss to combine.
  5. Chill and Serve: Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The flavors deepen as it sits. Optional: add fresh herbs or feta cheese to leftovers.
