Ingredients

  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (zucchini, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Optional: cooked rice for serving

Instructions

  1. Heat the oil in a large skillet or hibachi grill over medium-high heat.
  2. Cook the diced chicken pieces, seasoning well with salt and pepper, until browned and cooked through (about 5-7 minutes).
  3. Set aside the chicken to keep it tender while you cook the vegetables.
  4. Stir-fry the mixed vegetables with minced garlic and ginger for about 5-6 minutes.
  5. Combine the chicken back into the skillet and add soy sauce and sesame oil, mixing everything and cooking for an additional 2 minutes.
  6. Serve hot, optionally over cooked rice.
