Delicious and guilt-free blueberry muffins made with whole wheat flour and oats, perfect for breakfast or a snack.

Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners to prepare for the batter.
  2. Mix together whole wheat flour, rolled oats, baking powder, baking soda, and salt until well combined.
  3. Combine honey (or maple syrup), applesauce, almond milk, and vanilla extract until smooth and evenly blended.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the blueberries ensuring they’re evenly distributed throughout the batter.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool slightly in the tin before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Freeze for up to 3 months.
