A wholesome and healthy twist on classic banana bread, swapping refined sugars for honey and using whole wheat flour.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven and prepare your pan: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the bananas: In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted coconut oil.
  3. Combine sweet ingredients: Mix in the honey or maple syrup, vanilla extract, baking soda, and a pinch of salt.
  4. Combine dry ingredients: Gradually add the whole wheat flour and the cinnamon until just combined.
  5. Fold in the nuts: If you’re using nuts, fold in the walnuts or pecans.
  6. Pour the batter: Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Bake to perfection: Bake for 60-65 minutes or until a toothpick comes out clean.
  8. Let it cool: Let it cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Serve with almond butter or honey on top. Store in an airtight container for up to 3 days or freeze for longer storage.
