A vibrant and flavorful dish featuring herb-infused chicken, quinoa, fresh vegetables, feta cheese, and olives, inspired by Mediterranean cuisine.

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Create the marinade by mixing together olive oil, garlic powder, oregano, salt, and black pepper in a bowl.
  3. Coat the chicken breasts in the marinade to ensure they soak up all the delicious flavors. Place them on a baking sheet.
  4. Bake the chicken for 20-25 minutes or until cooked through and golden brown.
  5. While the chicken is baking, cook the quinoa or rice according to package instructions. Fluff it up for perfect texture.
  6. Combine the cooked quinoa or rice with cherry tomatoes, cucumber, red onion, feta cheese, olives, and fresh parsley in a large bowl. Toss gently to mix.
  7. Once the chicken is done baking, remove it from the oven and slice it into bite-sized pieces.
  8. Add the sliced chicken on top of the quinoa-rice mixture. Serve with lemon wedges for an extra burst of flavor.

Notes

For maximum flavor, marinate the chicken for up to an hour before baking. Try adding different vegetables or proteins to customize your bowl.
