A vibrant and healthy dish featuring seasoned chicken, quinoa or rice, fresh vegetables, and feta cheese, perfect for a taste of Greece.

  • 2 chicken breasts
  • 1 cup cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Season and sauté the chicken: Season the chicken breasts generously with salt, pepper, and dried oregano. Heat olive oil in a skillet over medium heat, and then carefully place the chicken breasts in the pan. Sauté the chicken until it’s fully cooked, about 6-7 minutes on each side. Once done, remove from heat and let it rest for a few minutes before slicing.
  2. Mix your quinoa or rice salad: While the chicken is resting, grab a big bowl and combine the cooked quinoa (or rice) with diced cucumber, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and sliced kalamata olives.
  3. Whisk together the dressing: In a small bowl, whisk together the olive oil, fresh lemon juice, a pinch of salt, and a dash of pepper.
  4. Toss the salad with the dressing: Pour the dressing over your quinoa or rice salad mixture and gently toss everything together until evenly coated.
  5. Final assembly and serve: To serve, scoop generous portions of the quinoa or rice salad into bowls. Slice the rested chicken breasts and lay them on top of the fresh salad.

Notes

For maximum flavor, marinate your chicken for at least 30 minutes before cooking. Feel free to swap out vegetables based on availability.
