Enjoy the crispy and flavorful falafel wrapped with fresh veggies and tahini sauce for a healthy and delicious meal.

Ingredients

  • 1 cup dried chickpeas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • Oil for frying
  • Pita bread or wraps
  • Lettuce, tomato, cucumber, for serving
  • Tahini sauce or yogurt sauce, for drizzling

Instructions

  1. Soak the chickpeas in water overnight. Once they’re plump and hydrated, drain and rinse them well.
  2. In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, and pepper. Blend until a coarse mixture forms, taking care not to over-process.
  3. Form the mixture into small balls or patties, ensuring they hold together well.
  4. Heat oil in a frying pan over medium-high heat. Fry the falafel until golden brown and crispy on all sides, about 4-5 minutes.
  5. Remove the falafel from the pan and drain them on paper towels to remove excess oil.
  6. Stuff pita bread or wraps with the hot falafel, topped with lettuce, tomatoes, and cucumber. Drizzle generously with tahini sauce or yogurt sauce before serving warm.

Notes

For leftovers, store in an airtight container in the fridge for up to three days. You can also freeze uncooked falafel patties for up to three months.
