Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 oz) diced tomatoes
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced onion and bell pepper to the skillet; cook until soft, about 5-7 minutes, stirring occasionally.
  3. Stir in the minced garlic, ground cumin, and paprika. Cook for an additional 1-2 minutes until fragrant.
  4. Pour in the diced tomatoes, bringing the mixture to a simmer. Let it cook for about 10 minutes.
  5. Using a spoon, create wells in the sauce, carefully cracking each egg into its own well.
  6. Cover the skillet with a lid and cook until the eggs reach your preferred doneness, about 5-8 minutes.
  7. Season the Shakshuka with salt and pepper to taste. Garnish with fresh parsley and serve immediately.

Notes

Serve with crusty bread or warm pita for a delightful meal. Leftovers can be stored in the refrigerator for up to 3 days.
