1 cup Italian bread crumbs

Instructions
Prepare the coating by setting up three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk together the eggs and milk. In the third bowl, add the breadcrumbs—mix in cayenne if desired.
Coat each piece of mozzarella by dipping into the flour, then the egg mixture, and finally rolling in the breadcrumbs.
Chill the coated cheese bites on a baking sheet for 20-30 minutes to help the coating set.
Fry the bites in 2 inches of heated vegetable oil until golden brown, about 30 seconds to 1 minute, turning halfway.
Drain and serve the fried cheese bites immediately, with marinara sauce for dipping, if desired.
