A simple and delightful crustless quiche filled with fresh spinach and cheese, perfect for breakfast, brunch, or a light dinner.

Ingredients

  • Fresh spinach
  • Eggs
  • Milk
  • Cheese (e.g., feta or cheddar)
  • Onion (optional)
  • Salt
  • Pepper
  • Olive oil or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onions in a skillet with olive oil or butter until translucent, about 3-4 minutes.
  3. Wilt the spinach in the skillet until cooked down, around 2-3 minutes.
  4. Whisk together the eggs and milk in a large bowl, and season with salt and pepper.
  5. Combine the sautéed spinach and cheese with the egg mixture.
  6. Prepare the baking dish by greasing it with olive oil or butter.
  7. Bake the quiche in the oven for 30-35 minutes until set and golden on top.
  8. Cool slightly before slicing and serving.

Notes

This quiche is delicious warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
