Ingredients
Scale
4 pieces boneless, skinless chicken thighs
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper, to taste
Oil for frying
4 pieces sandwich buns
1 cup shredded cabbage
1/2 cup shredded carrots
1/4 cup vinegar
1 tablespoon sugar
Salt, to taste
Instructions
Marinate the chicken by immersing thighs in buttermilk, seasoning with salt. Let it marinate for at least 1 hour or overnight.
Prepare the flour coating by combining flour, paprika, garlic powder, salt, and pepper in a bowl.
Heat oil in a skillet over medium-high heat until shimmering.
Coat the marinated chicken in the seasoned flour mixture, ensuring a proper coating.
Fry the chicken in hot oil for about 5-7 minutes on each side until golden brown and cooked through.
Make the pickled slaw by mixing cabbage and carrots in a bowl, combining vinegar, sugar, and salt in a separate bowl, then tossing with the veggies.
Assemble the sandwiches by placing a piece of chicken on the bottom bun, topping it with pickled slaw, and capping with the other half of the bun.
Notes
For extra flavor, consider marinating the chicken overnight. Serve fresh for the best results.
