- 8 ounces pasta (spaghetti or penne)
- 1 can (14.5 ounces) diced tomatoes
- 4 garlic cloves, roasted
- 1/2 cup heavy cream
- 2 tablespoons butter
- Fresh basil, chopped
- Fresh thyme, chopped
- 1/2 cup grated Parmesan cheese
- Olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package directions until al dente. Drain and set aside.
- In a pan, heat olive oil over medium heat and add the roasted garlic, cooking for a minute until it’s fragrant and slightly caramelized.
- Add the canned tomatoes to the pan with the garlic and let them simmer for about 5 minutes, allowing the flavors to meld.
- Stir in the heavy cream and butter, mixing until melted and well combined into a luscious sauce.
- Add salt and pepper to taste, then toss in the cooked pasta, making sure it’s well coated with that gorgeous sauce.
- Mix in the chopped fresh basil and thyme, allowing their flavors to infuse the dish beautifully.
- Serve topped with grated Parmesan cheese, letting it melt a bit before diving in!
