A creamy and comforting Chicken Alfredo that evokes memories of family dinners.

Ingredients

  • 8 ounces fettuccine
  • 2 tablespoons olive oil
  • 1 pound chicken breast, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine by bringing a large pot of salted water to a boil and adding the fettuccine. Cook until al dente, then drain and set aside.
  2. Sauté the chicken in a large skillet with the olive oil over medium heat for about 5-7 minutes until browned and cooked through. Remove and set aside.
  3. Savor the garlic by adding it to the same skillet and sautéing for about 1 minute until fragrant.
  4. Simmer the cream by stirring it into the skillet and bringing it to a gentle simmer.
  5. Melt the cheese by reducing the heat and slowly mixing in the grated Parmesan until smooth.
  6. Season the sauce with salt and pepper to taste.
  7. Combine the cooked fettuccine and reserved chicken back into the skillet, tossing until coated.
  8. Serve the Chicken Alfredo hot, garnished with chopped parsley.

Notes

This dish pairs well with arugula salad or chilled white wine.
