A healthful twist on the classic gnocchi, this cauliflower version offers a fluffy texture and subtle flavor, perfect for a nutritious meal.

Ingredients

  • 1 medium head of cauliflower
  • 1 cup all-purpose flour (or more as needed)
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • Grated Parmesan cheese (optional for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes.
  3. Pulse the cauliflower in a food processor until smooth.
  4. Combine the cauliflower puree, flour, egg, salt, pepper, and nutmeg in a large bowl. Mix until a dough forms.
  5. Roll the dough into long ropes and cut into small pieces.
  6. Bring salted water to a boil and add the gnocchi, cooking until they float to the surface, about 2-3 minutes.
  7. Remove with a slotted spoon and serve with sauce and grated Parmesan.

Notes

Pair with marinara sauce, sage butter, or pesto. Consider adding garlic or herbs to the dough for extra flavor.
