Cauliflower Fried Rice

A healthy, low-carb twist on traditional fried rice made with grated cauliflower and vibrant vegetables.

Ingredients

  • 1 head of cauliflower, grated
  • 2 tablespoons oil (olive or sesame)
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Grate the cauliflower into rice-sized pieces using a food processor or box grater.
  2. Heat oil in a large skillet over medium heat.
  3. Add onion and garlic to the hot oil and sauté until fragrant, about 2-3 minutes.
  4. Stir in the mixed vegetables and cook until softened, about 3-4 minutes.
  5. Push the vegetables to one side and pour in the beaten eggs, scrambling until cooked through, about 1-2 minutes.
  6. Add the grated cauliflower and soy sauce to the skillet, mixing everything together.
  7. Stir-fry for about 5-7 minutes until the cauliflower is tender but not mushy.
  8. Season with salt and pepper to taste and garnish with chopped green onions before serving.

Notes

Make-ahead by preparing the cauliflower and chopping the veggies a day in advance. Use low-sodium soy sauce for a lower sodium option.
