Deliciously moist blueberry oatmeal muffins that are easy to make and perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the rolled oats and milk in a bowl and let sit for about 10 minutes.
  3. Mix together the all-purpose flour, sugar, baking powder, baking soda, and salt in another bowl.
  4. Add the soaked oats mixture, vegetable oil, and egg to the flour mixture and stir gently until just combined.
  5. Fold in the blueberries gently.
  6. Grease a muffin tin or line it with paper liners.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool slightly in the tin before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for a week. Can be frozen for 2-3 months.
