Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup blueberries

Instructions

  1. Whisking dry ingredients together: In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Mixing wet ingredients: In another bowl, combine the buttermilk, egg, and melted butter. Whisk until smooth.
  3. Combining dry and wet mixtures: Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined.
  4. Folding in blueberries: Gently fold in the blueberries, being careful not to crush them.
  5. Cooking the pancakes: Heat a non-stick skillet over medium heat. Pour in about 1/4 cup of batter for each pancake and cook until bubbles form. Flip and cook until golden brown.
  6. Serving warm: Serve the pancakes warm, drizzled with syrup or topped with your favorite toppings.

Notes

Tip for fluffiness: Let your batter rest before cooking. You can substitute buttermilk with milk and vinegar if needed.
