Delightful Birria Tacos with slow-cooked beef in a fragrant sauce wrapped in warm tortillas.

Ingredients

  • 2 lbs beef chuck roast
  • 2 cups beef broth
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 bay leaf
  • Salt to taste
  • 8 corn tortillas
  • Cilantro, chopped
  • Lime wedges

Instructions

  1. Toast the dried chilies in a dry skillet for 2-3 minutes until fragrant.
  2. Blend the toasted chilies, chopped onion, garlic, cumin, oregano, and a cup of beef broth until smooth.
  3. Prepare the beef chuck roast with the chili sauce, remaining beef broth, bay leaf, and salt; cook on low heat for 2-3 hours.
  4. Shred the beef into bite-sized pieces.
  5. Assemble the tacos with the shredded meat in warm corn tortillas, garnishing with cilantro and serving with lime wedges.

Notes

Serve with Mexican street corn salad or pickled red onions for added crunch. Pair with margaritas or cold cerveza.
