Delightful Bakery Style Blueberry Muffins with a golden top and bursting blueberries, perfect for breakfast or as a snack.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt in a bowl.
  3. Mix the melted butter, eggs, milk, and vanilla until well combined in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the blueberries and lemon zest, if using.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Serve muffins with whipped cream or a pat of butter. Store leftovers in an airtight container for up to 3 days at room temperature or freeze for up to three months.
