A refreshing and vibrant salad featuring crisp cucumbers and a tangy dressing that’s perfect for summer.

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1/2 teaspoon red pepper flakes
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and place them in a large bowl.
  2. Whisk together the rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes until smooth.
  3. Pour the dressing over the cucumbers and toss well.
  4. Add the green onions and sesame seeds, and stir gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Best enjoyed fresh but can be stored for up to 2 days in an airtight container.
