A refreshing and light Asian Cucumber Salad with a zesty dressing, perfect for summer gatherings.

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 12 cloves garlic, minced
  • Salt and pepper to taste
  • Sesame seeds
  • Chopped green onions for garnish

Instructions

  1. Slice the cucumbers into thin rounds or half-moons.
  2. Whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, and minced garlic in a bowl.
  3. Combine the sliced cucumbers with the dressing and gently toss to coat.
  4. Let the salad marinate in the refrigerator for at least 30 minutes.
  5. Garnish with sesame seeds and chopped green onions before serving.

Notes
