1.5 pounds Pork tenderloin, trimmed and cut into medallions
1 cup Apple cider
1 medium Onion, sliced
3 cloves Garlic, minced
2 tablespoons Olive oil
1 teaspoon Thyme, fresh or dried
Salt and Pepper, to taste
1 tablespoon Butter
1 tablespoon Cornstarch (optional)
2 large Sweet potatoes, peeled and cubed
2 tablespoons Butter
¼ cup Heavy cream or milk
Salt, to taste
¼ teaspoon Cinnamon (optional)
Instructions
Marinate the Pork: In a bowl, combine the pork medallions with ½ cup of apple cider, minced garlic, thyme, salt, and pepper. Let it marinate for at least 15-30 minutes.
Prepare the Sweet Potatoes: In a pot, bring salted water to a boil, add the cubed sweet potatoes and cook for about 15-20 minutes until tender. Drain and return to pot.
Sear the Pork: Heat olive oil in a skillet. Remove pork from marinade and sear in skillet for 3-4 minutes on each side. Remove from skillet.
